Cold Lemon Whip Biscuit

°300 grams of flour

°110g butter

°120 grams of sugar
°2 egg yolks

° 6g Baking Powder

° 1 Lemon (45 ml juice + peel)

°Sugar castor and sugar powder

* Methods : 

In the salad bowl, place the soft butter, then add the egg yolk and beat with a mixer until a smooth mixture is obtained.

Add the sour yellow peel, add the lemon juice as well as the sugar, whisk again until the preparation is combined and beat slightly.

Finally, mix the yeast and flour and mix one last time. The dough should be pressed, homogeneous and slightly separated from the bowl wall.

Cover and set aside for 30 minutes in the fridge.

After rest, form balls about 3 cm in diameter with the paste and arrange them in overlapping rows on a baking tray, sufficiently spaced.

Then wrap it in sugar powder and generously put it in sugar powder. Place on a baking tray.

– Place the oven at 180 ° C for 12 to 15 minutes (for me 12 minutes). It will swell and crack, and it should not turn brown.

When you take it out of the oven, let it cool completely on a baking tray before dealing with it.
