Coffee Bean cookies



6 gr instant coffee

16 ml hot water

100 gr butter at room temperature

100 gr icing sugar

1 egg yolk

160 gr all purpose flour

15 gr cacao powder

30 gr corn starch


Dilute the coffee into the hot water and set aside to cool. In a bowl add the butter and whisk to soften.

Add the icing sugar and mix to combine.

Add the egg yolk and mix to combine.

Add the coffee and mix well. Sift the flour, cacao powder and corn starch and add them into the bowl. Make a chocolate-coffee dough. With your hands make rectangular small cookies.

Try to make them as similar as you can. Use a knife and press gently in the middle of each cookie to make them like the coffee beans.

Cover them carefully with plastic wrap and put them in the frizzer for 30 minutes to cool. Place them on a baking ban lined with parchment paper and bake them in a preheated oven at 160 C for 12 minutes. Let them cool completely.
