Chicken Potato Soup

Ingredients:

BACON CRUMBLE :

4 slices bacon finely chopped

¼ cup Panko Breadcrumbs

1 teaspoon fresh herbs (thyme, rosemary, and parsley)

CHICKEN POTATO SOUP:

1 tablespoon olive oil

3 tablespoons butter

1 medium yellow onion chopped

2 ribs celery chopped

4 tablespoons flour

2 cups low sodium chicken broth

2 ½ cups 2% milk or whole milk

3 large carrots chopped

4 large Russet or Yukon Gold potatoes peeled and diced (about 2 lbs)

2 cups shredded cheddar cheese

2 ½ cups cooked chicken breast cut in cubes or shredded

Kosher salt and fresh ground black pepper to taste
