Ingredients
1 teaspoon olive oil
1 cup chopped carrots
1 cup chopped onions
1/2 cup chopped celery
2 cloves garlic, chopped
1-1/2 lbs skinless bone-in chicken breast, makes 14 oz cooked
7 cups reduced sodium chicken broth
1/4 cup chopped parsley
2 bay leaves
2/3 cup dry pearl barley
fresh ground black pepper, to taste
